How was your holiday last week? Ready for more? I need a break, to be honest. Food pressure during the holidays can be rough. Whether you’re sick of cooking in general, or even worse, sick of food, I get it; but we still have to eat to, you know, live and stuff. Don’t worry, this isn’t a long word salad post before you get to the recipe. I’ll just leave you with these two chestnuts:
1. You DON’T have to eat leftovers anymore. If you’re done, you’re done! MOVE ON!

And now, a refreshing overnight oats recipe that you can prep and forget about until you’re hungry. And yay! It doesn’t have “holiday” spices. Save that for your parties.
OVERNIGHT BLUEBERRY-LEMON OATS
Ingredients for 1 serving:
⅓ cup (25g) rolled oats
2 tbsp vanilla protein powder (use your fave)
1 tsp. chia seeds
½ cup (120ml) fave milk, unsweetened
½ cup (75g) blueberries
1 tbsp. lemon zest
4 tbsp. blueberries
Directions:
1.In a bowl, mix together the rolled oats, protein powder, chia seeds, almond milk, 1/2 cup blueberries and lemon zest. Place in a jar or serving glass, cover and place in the refrigerator overnight.
2.When ready to eat, top with fresh blueberries.
